BBQ Salmon: all quantities are approximate so don’t sweat it

1 bottle Lawry’s Teriyaki Marinade

¼ cup Thai Sweet Chili Sauce

¼ cup Rice Wine Vinegar

¼ cup Soy Sauce

¼+ cup chopped green onion

1/8 cup Sesame Seed oil

Salt/Pepper…Maybe a ¼ cup peanut butter for something more Thai…Mix & Marinate for 4+ hours, BBQ

 

HALIBUT CEVICHE

2# cubed halibut, dry on paper towels

6 limes, squeezed…heat limes before squeezing to maximize juice extraction

2 diced tomatoes, 1 diced white onion

1 bunch chopped cilantro

8 oz. spicy V-8 juice

about 1/3 bottle Tabasco or some other Mexican hot sauce, plus 1 minced Jalepeno pepper, w/o seeds

1 minced clove garlic

salt to taste

Let it sit for at least an hour, preferably overnight

 

Baked Fish Olympia

Mix together equal quantities of mayonnaise and grated cheese, I like cheddar.

Add some chopped onion (amount depends on how well you like onions).

Add approx. 1 tsp. Lemon Pepper and 1 tsp. Old Bay Seasoning (comes in a rectangular can, yellow and blue).

Cut fish into smaller pieces, like 1/2 person servings, lay in bottom of baking pan, cover with the mayo/cheese/onion mix.

Cover the mix with Panko, crumbled crackers, or canned Onion rings, then sprinkle Parmesan Cheese on top of the whole mess.

Bake @ 350 maybe 45 minutes or until center of pan bubbles.

 

CLAM CHOWDER

Fry 1//4# chopped bacon about 1/2 way, drain off grease. Add 1-2 (each) cups chopped celery and onion, fry the whole mess until bacon is done.

Add 2-3 cups chopped clams, 4 cups peeled/sliced potatoes, 1 cup frozen corn. Salt & pepper. Just barely cover with water. Bring to a boil and simmer 1/2 hour, covered.

Add 1 can evaporated milk (you may have to use more if you’ve made a large batch), and 1/4 to 1/2 cube butter. Reheat and serve.

 

Orange Juice fish:    cut fish about 1” thick

Marinate skinned fish in orange juice for 1+ hr, make a boat out of foil and place the fish in the boat on the bbq. Dump the OJ in the boat so that the fish is about ½ covered. Sprinkle with Lawrys season salt. Cook until just done. Remove, top with melted butter and fresh lemon juice

 

Southern deep fried fish

Marinate fish for 5 minutes in mixture of 1 quart white vinegar and 1 bottle Franks Red Hot sauce. Press into corn meal and deep fry

 

Easy pan fried fish….cut skinned filets about ¾” thick, pat dry, dip in beaten egg. Roll/press in cracker meal (grind saltine crackers in the blender). Pan fry in ¼” Canola oil. Sprinkle with salt immediately upon removal from pan.

 

Tartar Sauce:

1 cup fine chopped dill pickles

¾ cup fine chopped onion

1/8-1/4 cup chopped green olives w or w/o the pimentos

2 Tbs lemon juice

1tsp Lawry’s season salt

½ tsp fine pepper

2 cups mayonnaise

Mix and chill for a hour
